Ingredients:

  • 1 cup Health Ranger Select Organic Quinoa, cooked
  • 2 ½ cups organic black beans, rinsed
  • 1 ½ cups organic spinach
  • 1 cup organic cherry tomatoes, halved
  • 6 organic green onions, chopped
  • 2 large organic limes, juiced
  • 2 cups water
  • ¼ cup organic cilantro, finely chopped
  • 4 Tbsp. organic olive oil
  • 2 tsp. organic ground cumin
  • ½ tsp. red pepper flakes
  • Salt, to taste
  • Pepper, to taste

Directions:

  1. Place the cooked quinoa, spinach, black beans, tomatoes, green onions and cilantro in a bowl.
  2. Thoroughly toss all the ingredients together until they are evenly incorporated into the quinoa.
  3. In a separate bowl, mix together the lime juice, olive oil, ground cumin and red pepper flakes to create a salad dressing. Season to taste with salt and pepper.
  4. Drizzle the quinoa veggie bowl with the dressing and toss to coat.
  5. Serve immediately and enjoy!
